Pumpkin Spice Scones
(Makes 16)
2 ¾ cups of almond flour
1/3 cup swerve
2 tablespoons baking powder
2 tablespoons pumpkin spice (or 1 tablespoon cinnamon, 1 teaspoon ginger, 1 teaspoon nutmeg, 1 teaspoon all spice)
½ cup cold butter, cut in tablespoons
2/3 cup pumpkin
2 eggs
Mix all dry ingredients and add pieces of butter. Mix until butter is incorporated and batter is a little crumbly. It should look like this:
Add pumpkin and then one egg at a time. The trick when making scones is to mix as little as possible. The more you mix the drier the scones become. The finished batter should look like this:
Drop the batter onto a baking sheet that is covered with parchment paper. Form a flattened circle with the batter on the sheet.
Bake at 425 degrees for 20 minutes or until browned and toothpick comes out clean in the center.
Allow to cool completely before cutting. Enjoy!
