Keto Chocolate Cake with Butter Mint Frosting

Cake:

4 eggs

¼ cup butter

½ cup Swerve granulated sugar

1 teaspoon vanilla

½ cup almond milk

¼ cup heavy cream

6 tablespoons coconut flour

1 cup almond flour

2 teaspoons baking powder

½ teaspoon baking soda

5 tablespoons unsweetened cocoa powder

Frosting:

½ cup of butter, room temperature

1 teaspoon peppermint extract

2 scoop Quest coconut oil powder

1 cup Swerve confectioner sugar

 

  1. Beat butter, sugar and eggs then add remaining liquid ingredients. Slowly add dry ingredients and beat until evenly mixed.
  2. Bake at 350 degrees for 25 minutes in an 8×8 greased pan.
  3. While the cake cools, beat butter and peppermint. Add coconut powder and confectioner sugar slowly.
  4. Spread on cooled cake and serve.
