Keto Chocolate Cake with Butter Mint Frosting
¼ cup butter
½ cup Swerve granulated sugar
1 teaspoon vanilla
½ cup almond milk
¼ cup heavy cream
6 tablespoons coconut flour
1 cup almond flour
2 teaspoons baking powder
½ teaspoon baking soda
5 tablespoons unsweetened cocoa powder
½ cup of butter, room temperature
1 teaspoon peppermint extract
2 scoop Quest coconut oil powder
1 cup Swerve confectioner sugar
- Beat butter, sugar and eggs then add remaining liquid ingredients. Slowly add dry ingredients and beat until evenly mixed.
- Bake at 350 degrees for 25 minutes in an 8×8 greased pan.
- While the cake cools, beat butter and peppermint. Add coconut powder and confectioner sugar slowly.
- Spread on cooled cake and serve.
